So besides the blender, I thought I’d try out the wife-y thing and bake for my husband’s birthday. Unlike me, he’s not much into sweets so I flipped through a recipe book from my favourite vegan restaurant in LA and found the perfect birthday muffin – Wheat-free Corn Muffin.
So the recipe called for blue cornmeal and yellow cornmeal to be swirled together … … to give the muffins a marble effect. Except as you can plainly tell from my photos, I haven’t quite got the swirl action down yet and in the end the muffins looked rather botched up 😛 Thankfully, my kind husband was encouraging and smiled as I came out of the kitchen with them.
They taste better than they looked … at least that’s what my husband reassured me 🙂 And that ignited a new found interest in baking … organic, vegan and healthy muffins, cakes and cookies. Maybe it’s a new calling … we’ll see how long it’ll last 😉
